Cheesy Baked Chicken 

Cheesy baked chicken with mushrooms is a delicious and really easy dish to make on a busy weeknight, no matter what your culinary skill level is. It is warm, hearty, cheesy, and comforting.

Cheesy Baked Chicken Ingredients 

Butter, 2 tablespoons 

Olive oil, 2 tablespoons 

Chicken, 2 breasts, cut into tender-sized pieces 

Mushrooms, 8 ounces, sliced 

Onion, ½ medium-large, diced 

Garlic cloves, smashed 

Salt, to taste 

Pepper, to taste

Chicken seasoning, to taste 

Mozzarella cheese, 4 ounces, shredded 

Chicken broth, ½ cup 

Parsley, for garnish

Saute the mushrooms and onions in a pan with butter and olive oil for about five minutes over medium-high heat. Season with salt and pepper and add in the crushed garlic. Put half of the mushrooms and onions in a baking dish, and set the other half off to the side in a bowl for now. 

Cut the chicken breast into tender-sized pieces. The key here is consistency, and making sure they are all the same size and thickness, otherwise they will not cook evenly. You can keep the chicken in whole breast pieces, just keep in mind that it will need longer in the oven. 

Once the chicken is cut into the desired size, season with salt, pepper, and chicken seasoning. You can also use a meat mallet to pound the chicken into even sized pieces. 

Add a small amount of olive oil back into the pan and cook the chicken until it has a nice brown crust on both sides, usually about 2 minutes per side on medium-high heat. Be really careful not to add too much oil into the pan, otherwise you will not get a good crisp on the outside of the chicken. 

Once the chicken has a nice crust on the outside, move it to the baking dish that has the onions and mushrooms in it. These will create a nice bed for the chicken to sit on while in the oven. 

Deglaze the frying pan with chicken broth, pulling up all the delicious brown bits off the bottom while the broth reduces. This should take about 5 minutes and will simmer nicely. 

Once the broth is reduced, add that into the baking dish. Top off the chicken with the mushrooms and onions you set aside earlier. Then top with the shredded mozzarella cheese, and bake. 

Bake in a preheated 375 degree oven, for about 15 minutes. If you’re using bigger chicken pieces, it may take longer. You want the chicken to reach an internal temperature of 165 degrees, measured with a meat thermometer

Once the chicken is cooked through and the cheese is melted, that’s it! Let it rest for 5 minutes or so, garnish with parsley, and serve.

Recipe Notes 

Pair this recipe with a delicious salad and a homemade salad dressing like red wine vinaigrette, some salt crusted potatoes and parmesan roasted asparagus for a really easy and tasty meal. 

Why I Love This Recipe 

I love this recipe because it is simple. I’m busy, I get tired, and there are times just feeling lazy. But recipes like this mean there is no excuse for me not to be able to make a tasty and simple dinner for my husband and me. You don’t have to be Betty Crocker to make this meal! 

The cheesy baked chicken requires such minimal prep work and cooking, that it isn’t a time consuming recipe. I didn’t time it out, but it was maybe 30 minutes, at the most. Even when I’m exhausted, I can handle 30 minutes and only having to chop a couple veggies and make sure my chicken is all the same size.

This entire dish took up one frying pan and one baking dish. That’s it, and I didn’t have to change the heat setting on the stove at all. Medium-high was perfect for the entire thing. 

The chicken comes out so tender, the cheesy melty and stringy. The mushrooms and the stringy cheese are my husband’s favorite part. 

For as flavorful and delicious as this cheesy baked chicken recipe is, there is a really limited number of ingredients. Anyone with a decently stocked pantry and freezer can make this dish at any time. That saves a lot of time and money right there, yet it doesn’t feel like I’m skimping on the ingredients. 

This cheese baked chicken feels like a five star dish with two star effort. I don’t know about anyone else, but I appreciate that!
