The combination of sweet and tart is just perfect for a light and refreshing dessert. It is so simple to make, and anyone of any skill level can make and enjoy it for themselves. Even if you don’t consider yourself good at baking, you can make this amazing treat.

Easy and Delicious Lemon Poppyseed Loaf Ingredients
Flour, 1 ¾ cups
Baking Powder, 2 teaspoons make your own with this recipe!
Poppy Seeds, 1 ⅓ tablespoons
Sugar, 1 cup
Salt, ½ teaspoon
Lemons, 2 large, zested using a microplane and juiced
Butter, ½ cup or 1 stick
Eggs, 3
Vanilla Extract, 2 teaspoons
Milk, ¾ cup
Lemon Sugar Glaze
Sugar, 2 tablespoons
Lemon Juice, 2 teaspoons
Milk, 1 teaspoon

Easy and Delicious Lemon Poppyseed Loaf Directions
Preheat the oven to 350 degrees.
Zest and juice the lemons into a bowl and set aside.
Grease a loaf pan and set aside. In this case I used two and distributed the batter evenly between the two. You can use one if you like, and just increase the baking time.
In a mixing bowl, whisk together the flour, baking powder, salt, and poppyseeds until they are well combined.
In a stand mixer, beat the butter and sugar together until they are a nice fluffy consistency. Add in the lemon juice and zest, and continue to mix. You may need to stop and scrape the sides of the bowl with a spatula to make sure it all mixes together well.
Next add in the eggs, one at a time, followed by the vanilla extract, and then the milk.
It is time to add the flour mixture in, and do it in small increments to keep it from flying out of the mixing bowl and making a mess.
Scrape the sides of the bowl again with a spatula, and make sure everything is mixed well. If you need to, you can fold the batter around with the spatula. Be careful not to overmix it though, as it will become dense.
Pour the batter into your loaf pan, and bake for about 50 minutes, or until a toothpick/knife/cake tester inserted into the center comes out clean.
Transfer to a cooling rack and let it sit.
For the glaze, simply mix together all three ingredients, the sugar, lemon juice, and milk. Then pour over the loaf once it is out of the oven.
Nothing left to do but slice the loaf and enjoy it!

This Easy and Delicious Lemon Poppyseed Loaf recipe was made in a glass loaf pan. Glass and metal conduct heat differently, and it baked hotter faster. This developed a nice crust on the outside that I really enjoyed. If you don’t want that crispy brown crust, I would recommend using a metal loaf pan. You can also use a cake pan if you don’t have loaf pans.
If you decide to just use one pan, it may take a bit longer to cook completely. I recommend at the 40 minute mark to start checking it with a knife, toothpick, or a cake tester and see if it comes out clean. If not, just bake in a 5 minute increment from there. The size of the pan and amount of batter in the pan changes up the cooking time.
The lemon glaze is completely optional. I’ve made it with it and without it, and I’ll be the first to admit that I thought it was unnecessary. I prefer it without, but that is just me. It is still an amazing and delicious addition to your loaf.

I have a serious weakness for any and all lemon desserts. This one can be eaten and enjoyed as a breakfast treat, or a dessert to top off a delicious meal. I made it in addition to my honey mustard pork chop dinner earlier this week because I had some extra lemons and that sounded like the perfect way to end the meal, which it really was.
My husband, Nathan, raves about this dessert and told me that I can make it anytime I want to. High praise! He also loves it as a morning snack when he comes home from work.
This is a super simple recipe that anyone of any skill level can make, even kids just starting to bake or are interested in helping out in the kitchen. This is a recipe that I let Nathan make on his own as well.
