Easy 11 Ingredient Homemade Carrot Bread is one of my favorite quick breads. I have recently discovered I am completely in love with making my own bread, and slightly obsessed with doing so. It is honestly really easy, especially with quick breads.
Quick breads mean there is no yeast in it, and no rise time. It really is quick, just throw everything together and into the oven. It is the easiest form of bread, and absolutely delicious.

Easy 11 Ingredient Homemade Carrot Bread Ingredients
Flour, 2 cups
Sugar, 1 cup
Baking Soda, 1 ½ teaspoons
Salt, 1 teaspoon
Pumpkin Pie Spice, 2 teaspoons, make your own with this recipe
Carrots, 2 ½ cups, shredded
Eggs, 3
Vegetable Oil, ¾ cup
Milk, ¼ cup
Vanilla Extract, 1 teaspoon
Walnuts, ¾ cup, chopped
Easy 11 Ingredient Homemade Carrot Bread Directions
Preheat the oven to 350 degrees.
Line a 9X5 loaf pan with parchment paper.
In a food processor, chop up the carrots. Alternatively, you can use a box grater, but I find the food processor to be much faster and more efficient.
In a mixing bowl, whisk all of the dry ingredients together. This would be the flour, sugar, baking soda, salt, and pumpkin pie spice.
In another mixing bowl, combine all the wet ingredients together. This would be the carrots, eggs, oil, milk, and vanilla extract, and whisk them all together.
Slowly add the dry ingredients into the wet, whisking as you go to mix. Once done, fold in the walnuts, and mix until just combined.
Transfer the bread to a cooling rack to cool completely before slicing.
Pour the bread mixture into the loaf pan and bake for 55-65 minutes, or until a cake tester inserted into the center comes out clean.
Recipe Notes
For the walnuts, gently toast them in a saute pan before adding into the bread, for a crunchier and more pronounced flavor.
Variations: Instead of/in addition to the walnuts, pecans are excellent in this recipe. You can toss in some coconut, raisins, or diced apples, if you want to.
Carrot bread will last up to a week at room temperature in a Ziplock bag or air-tight container. You can also freeze the carrot bread by writing it tightly with plastic wrap and then aluminum foil, with the date written on the outside. Frozen carrot bread will last about a month in the freezer.
Do not overmix the batter, stir it until just combined.
Parchment paper makes it easy to remove from the loaf pan, but it is not a necessity. You can spray the pan with a non-stick baking spray.
I use glass loaf pans when I make this recipe, but you can use mental ones. Just keep in mind that they heat differently than glass, and you will end up with a crunchier exterior to your bread.
You can also garnish the top of the bread with pumpkin seeds or chopped nuts before baking, to give it a nice crunchy top.
If desired, you can use ½ cup white sugar, and ½ cup brown sugar, just for a slight flavor variation.
Why I Love This Recipe
Quick breads are one of the easiest breads to make, as it doesn’t require yeast or any rise time. I will be the first to admit that I love my stand mixer and it gets a lot of use. But this is a bread that can be made with a couple of mixing bowls, and a whisk. You don’t need anything fancy to make this bread.
This is perfect for the holidays, family gatherings, or if you are just craving something really tasty. It can also be given as a homemade holiday gift.
My husband loves making bread like this with me, and it is a really fun tradition for us. We spend some of our best quality time together in the kitchen. With that in mind, this is a perfect kid-friendly bread recipe to build their confidence and let them learn about baking.
Anyone of any skill level can make this bread. I’ve made complicated things many, many times, but this is an easy one. You don’t need anything fancy or any special skills in the kitchen to make a delicious and homemade bread from scratch that the entire family will enjoy and love.
