Amazingly Easy Lemon Oatmeal Cookies. These cookies are seriously my new favorite cookie! They are so tasty, and I find myself making them often now. They are soft, chewy, and have the best lemon flavor.
They are so easy to make, and have a light and crispy texture to them. Garnished with poppyseeds, they are the perfect cookie. I can’t gush enough about how much I love these cookies, but I will tell you that they are amazing and I’m quite sure you will love them as much as I do.

Amazingly Easy Lemon Oatmeal Cookies Ingredients
Flour, 1 ¼ cups
Baking Soda, ¾ teaspoon
Salt, ¼ teaspoon
Butter, 1 cup or 2 sticks
Sugar, 1 cup
Lemon Extract, 1 teaspoon
Lemon, 1 medium size, zested and ½ juiced
Oatmeal, 1 ½ cups
Poppyseeds, to garnish
Amazingly Easy Lemon Oatmeal Cookies Directions
Preheat the oven to 350 degrees.
Line a baking sheet with parchment paper and set it aside.
In a mixing bowl, whisk together the flour, baking soda, and salt.
In a stand mixer, cream the butter and sugar together on a high speed, until it has a light and fluffy texture. I like to let mine go for about 3 minutes.
Turn down the speed of your stand mixer to medium, and add in the lemon extract, zest, and juice. You need 1 teaspoon of lemon extract, the zest of 1 whole medium lemon, and the fresh juice of half the lemon. Beat until it is well blended. If you need to, use a silicone spatula to scrape the sides of the bowl when necessary to ensure it is well-combined.
Slowly start adding the flour, baking soda, and salt mixture on a low speed. Be sure the mixer is on a low speed, or the flour will explode out and make a mess.
Add in the oatmeal next and mix until well-combined.
Using a small cookie scoop or a tablespoon measuring spoon, scoop out the cookie dough and use your hands to roll it into a ball. If the dough sticks to your hands, you can always sprinkle a little flour on your hands to keep that from happening. You can do the same with the cookie scoop to help it as well.
Place the cookies on the baking sheet you prepared earlier, giving ample space between the dough balls, because the cookies will spread out. The bigger you make them, the farther they will spread out. My first batch looked like frisbees. It was actually really funny.
Once the dough balls are formed, I take poppyseeds and sprinkle them on for a garnish right before going into the oven. You can put them in a bowl if you want and dip the cookies in, if it is easier.
Bake the cookies at 350 degrees for 9 minutes or until they start to look barely crispy on the bottom. Be sure that the tops don’t look wet or pale, but are not overbaked. I start checking them at the 8 minute mark, but anything past 10 minutes is overbaked and dry for me.
Once the cookies are out of the oven, let them sit on the cookie sheet for a couple of minutes to firm up before transferring to a cooling rack to finish cooling completely.
Once they are cooled and ready to eat, I like to garnish with a little extra fresh lemon zest before serving. This is totally optional, but I really like the extra pop of acidity from the fresh lemon zest.

These cookies spread out a ton if you make them too big. I used a small cookie scoop instead of measuring them out with my hands, and it turned out well. If yours are extra flat or runny, add a little bit more flour and try again.
This recipe is vegetarian, because it doesn’t contain eggs. Which means you and your kids can eat the batter straight from the mixing bowl! I end up eating a bunch when I make this recipe. I love recipes where I can eat the cookie dough! I’ll be honest and tell you I do it anyway, eggs or not, but I don’t let little ones eat batter with eggs because their bodies are a bit more fragile still. So I often get excited about recipes I can make with little ones like my nephew and let him eat the batter safely.
Because these cookies spread out more than normal, you can try a test batch and see just how much they’ll spread out. You’ll be able to tell pretty easily if you need more flour or if you simply made the cookies too big. It may take a bit of trial and error, as it did with me to really perfect these. But that is part of the fun. Once you perfect it, you’ll want to constantly make these.
Why I Love This Recipe
I started making these cookies because I was stuck at home during an ice storm for a week, and was inspired to make some things from the pantry and use up what I had because I couldn’t go to the grocery store.
I’m generally not an oatmeal cookie fan, but with lemon, it actually works and is delicious. These cookies converted me!
If you love lemon like I do, then you already know there is no such thing as too many lemon recipes. This really has become one of my favorite recipes, especially with the poppyseeds and garnishing with lemon zest after they are baked. They are a favorite for both me and my husband.
